Green Goddess Salad
This Green Goddess Salad is one of those recipes you make once and reach for all week. Crisp cabbage and cucumbers are tossed in a bright pistachio herb dressing that only gets better as it sits.

Ingredients
1 head of cabbage, chopped
2 mini cucumbers, diced
Dressing:
1/2c olive oil
Juice from 1 lemon
Juice from 1 lime
1/2c fresh basil
1/2c fresh parsley
1/2c unsalted pistachios
1 shallot, chopped
1 clove of garlic
1/2tsp salt
1/2tsp black pepper
Water, to thin the dressing
Instructions
Add all of the ingredients for the dressing into a blender, and blend until smooth. Add a little water as necessary (the sauce will be quite thick - adding water will help to thin it out and make it into a silky dressing rather than a thick sauce.)
Once the dressing is to your desired consistency, toss the dressing with the cabbage and cucumbers.
*Cabbage holds up really, really well to dressing! The salad will keep for 3-4 days as prepared.
