Cinnamon Banana Baked Oats
You know we love a good make-ahead breakfast, and this cinnamon banana baked oats recipe does not disappoint! It’s super simple to throw together, and you’ve got a delicious, healthy breakfast for an entire week!

Ingredients
1 banana, mashed
2 eggs
2c unsweetened almond milk
3tbsp maple syrup
1tsp vanilla extract
3c rolled oats
3tsp cinnamon
1/2tsp salt
2tsp baking powder
For serving:
Greek yogurt, banana slices, maple syrup
Instructions
Preheat the oven to 350.
In a large bowl, whisk together the banana, eggs, milk, maple syrup, and vanilla extract until combined. Then add the oats, cinnamon, salt, and baking powder, and mix until combined again.
Line a 9x9 baking dish with parchment paper, and spray with a neutral cooking spray, coating all sides. Pour the oat mixture into the dish.
Bake for 35-40 minutes or until a toothpick comes out clean.
Slice into 6 rectangles to serve. *This will keep in the fridge for 4-5 days, and in the freezer for a month. I recommend warming up a slice a bit when you’re reading to eat it!
